THE SEVEN HACCP PRINCIPLES
The goal in applying HACCP principles in food-related industries is for the operator to take purposeful actions
to ensure safe food products. The regulatory authorities have a common objective in mind – providing safe,
quality food/wine to consumers.
The inspectors can help achieve this common objective, but remember that the ultimate responsibility for food
product safety lies with the ability to develop and maintain an effective HACCP-based food safety management
system.
