MANAGERIAL CONTROL MANUAL Maintaining the HACCP System Once implemented, it is important to maintain a HACCP system properly. Verification of the system will help to determine if employees are properly monitoring Critical Control Points. A HACCP system should also be regularly reassessed, particularly as changes are made in methods and in intended users of the final product. These verification activities should be maintained as continuous additions to the HACCP system. They should also go through the same review and approval process as the original system. It is very important that operations keep up-to-date with their record keeping (monitoring, corrective actions, etc.), as even the best-intentioned operation will be in trouble if it gets behind in its records. 12
