Focaccia
Over the summer I ran many children’s workshops, but I have to say, one of my
highlights was what the children did with this focaccia recipe. I gave them this
recipe and told them to be creative… and this is what they came up with (as seen in
photographs). I wanted to share the recipe with you at home because not only are they
super tasty but they can also be incredibly fun to make for you and your children!
Use a cutlery knife to quickly mix the
water into the flour mix, turn the bowl as
you’re mixing to evenly distribute it.
(makes 6 small individual rolls)
250g strong plain flour, plus
extra for dusting
Pour a little of the remaining water over
any dry crumbs. Mix again with the
cutlery knife and use your hands to bring
it together.
7g dried yeast
1 tsp salt
160ml warm water
olive oil, for greasing
Knead the bread dough on a lightly floured
work surface for 5-10 minutes until it
is soft and even in texture. Shape into 6
individual rolls.

choice of herbs
Mix together the flour, yeast and salt in a
large bowl. Lightly oil a baking tray and place your
rolls onto the tray.
Evenly distribute most of the warm water
and the olive oil over the mixture. Keep
the remaining water aside. Cover the dough with a piece of lightly
oiled clingfilm and leave to rise for about
45 minutes. Preheat the oven to 200˚C.
Check that the dough is ready
to go into the oven by lightly
pressing one corner of it with
your finger. If an indentation
is left, the dough is proved
and ready.
Before you place it in the
oven, make dimples using
your finger at regular
intervals in the dough.
