Spicy Bean Burgers
(makes 6)
These spicy bean burgers are a great alternative to regular beef burgers,
they’re bright and colourful with lots of flavour.
½ red onion
2 garlic cloves
1 400g tin cannellini beans
50g breadcrumbs
2 tbsp sundried tomato paste
pinch of chilli
1 egg
salt and pepper
1tbsp cooking oil
Finely chop the onion and crush the garlic.
In a large bowl, mash the beans using a
potato masher.
Add the remaining ingredients and mix well.
Season with salt and pepper.
Use your hands to shape the mixture into six
round disks.
Heat the cooking oil in a frying pan over a
medium heat. Cook the burgers in the pan
for 2-3 minutes on each side. Lightly press
the burgers with a spatula to ensure the
heat gets all the way through. When they are
cooked they should have become solid and
golden brown.
