Supply Chain... From Field to Fork!
These days we take it for granted that whatever
we want to eat will be available to buy throughout
the year, but it takes many stages to get food from
field to fork.
The Waitrose buyers are responsible for deciding
what products are sold in store. Their decisions
are based on customer demand, food innovation,
quality and quantity of raw materials. Raw materials
are sourced from growers across the globe.
Waitrose always sources products from Britain
when in season but our climate does limit what we
can produce through the year.
We have deep relationships with our suppliers,
all our British grown fruit and veg comes LEAF
marque certified (Linking Environment And
Farming). The Waitrose Foundation has been running for over ten years in Africa
and we’ve contributed over £8 million in support for improved health, education and
sustainability in Ghana, Kenya and South Africa. Our essential milk comes from dedicated
British farms and is produced by exclusive farms, with every pint traceable back to the farm that
produced it. The farmers produce high standards of milk quality along with the best practises in animal
welfare and also encourage local wildlife to flourish on their farms. We even have our own farm at
Leckford in Hampshire, which produces milk, mushrooms and rapeseed oil for us.
Most of our complex products see the raw materials sent to a manufacturer to produce the finished
article, be it a salad, ready meal, birthday cake or any other of the thousands of lines we stock. At all
times the raw materials are cared for to maintain freshness and quality. Food hygiene standards and
traceability are also maintained every step of the way. Simple individual items are sent to pack houses
and stored in ideal conditions.
A central team of provisioners forward plan ordering levels on each individual line to ensure there
is enough product to meet expected customer demand without the risk of food waste. Many
factors have to be considered
such as food trends, weather
