Hitch Fit Healthy Casserole
Ingredients
•
16 oz. Carton egg whites
•
1 Dozen eggs
•
1 Medium tomato
•
1 white onion
•
2 sweet potatoes
•
1lb 99% lean Ground Turkey
•
5 pieces Turkey Bacon
•
Bag of spinach
•
Your choice of seasonings. (Salt/ Pepper/ Garlic/ Onion/ Cayenne etc.)
Instructions
1.
Preheat the oven to 350 F. Coat your glass dish with coconut oil.
2.
Cook Ground Turkey and season well throughout cooking.
3.
Chop Onion & Tomato, set aside.
4.
In separate bowl whisk 12 eggs, and carton of egg whites together. Add onion and
tomato to egg mixture.
5.
Cut sweet Potato into slices about ¼ inch thick. Layer the slices in the glass dish.
6.
Top sweet potatoes with the ground meat, then bag of raw spinach.
7.
Stir up egg & veggie mixture, and pour over everything in dish.
8.
Cut bacon into 1 inch thick pieces, and sprinkle onto the top.
9.
Bake in the oven for 30-45 minutes until sweet potatoes have softened, and eggs are
cooked through.
Makes 10 servings.
