Tu-fu Salad (Tuna & Tofu)
Tuna and tofu (non GMO & fermented is best) are two foods highly nutritious on their own. So, what do you think happens
when you put the two together? This light salad is full of protein and is a fantastic way to meet your daily nutritional
requirements.
Nutrition:
11.8g fat
1.5g saturated fat
6.9g carbohydrate
16.6g protein
Serves 8 - 162 Calories per serving.
Ingredients:
3 cups bean sprout
1 package firm or medium non GMO tofu, cut into 1/2" cubes
2 (6 oz) cans tuna packed in water, drained
1 cup watercress, chopped
2 tomatoes, cubed
1/2 cup onion, chopped
4 cloves garlic, thinly sliced
1/4 cup toasted sesame oil
1/2 cup light or reduced sodium soy sauce
Directions:
In a dish, layer bean sprouts, tofu, tuna, tomatoes and watercress. In a
skillet over medium heat, use sesame oil to brown garlic. Move garlic and
oil into a bowl with the onion and soy sauce. Mix together, and pour on top
of the prepared tofu and vegetable mixture. If you're needing to add an
additional carb source try adding some beans of choice. If you're wanting to
increase the fat content add a small amount of seeds of choice.
