Prune Apple Yoghurt

This recipe is fantastic for relieving constipation. Using the prune mix is so much better than prune juice, which doesn’t contain the fibre of the prune pulp.

Ingredients:

1 tub baby yoghurt or small portion of natural yoghurt

2 tablespoons of pureed apple

2 portions of prune mix

To make Prune Mix:

1 packet of prunes

Large microwave safe casserole dish

Boiling water

Instructions:

Mix thawed warm apple and prune mix

Stir in yoghurt – enjoy!

Place prunes in dish, cover with boiling water

Cover dish and cook in microwave for 10 min

Add extra water (will be absorbed) and repeat

Prunes become nice and plump and the extra water helps also with the constipation

Take care not to let them dry out, as they will burn

Cool, puree until smooth and freeze in ice cube containers

Use 1-2 portions in each serve

This cake is great for those kids with dairy and egg allergies.

Ingredients:

3 C flour

1 tsp salt

2/3rd C cocoa

2 tsp vinegar

2 C cold water

2 C sugar

2tsp baking soda

2tsp vanilla essence

2/3rd C oil

Instructions:

1. Mix all together in a large bowl with a fork or whisk.

2. You can either make a large one in a roasting dish or two in small cake tins.

3. Bake at 180 degrees celcius for approximately 20-30mins or until skewer comes out clean.
