Pilot plant for processing dairy desserts

SACOME has recently supplied a pilot plant for the processing of various dairy desserts . The line , designed with variable capacities , can process up to 20 different dairy dessert recipes derived from soy , oats , hazelnut , and chocolate , among others , and performs sterilisation and cooling for aseptic filling of the different processed products .

Problem During the study phase , the customer was required to send samples of the different products to be processed and , in collaboration with the university laboratories , SACOME analysed the thermal properties relevant for the thermal calculation , such as density , specific heat , thermal conductivity and viscosity curves . For some of the products , the company had to make several laboratory measurements because the product thickened due to the presence of certain ingredients . The valuable conclusions obtained from these analyses allowed for work with very precise information when designing the heat exchangers .

Solution With this starting point , the technical department proposed model S-TF20-I , ideal for low capacities of production , and calculated the different heating and cooling sections of the exchanger . The S-TF20-I Tube in tube Sanitary Heat Exchanger is a monotubular heat exchanger consisting of two concentric tubes . The product flows through the inner tube while the service flows through the space between the two tubes . The S-TF20-I is intended for heating processes ( pasteurization , sterilization , UHT , etc .) or cooling of products with low-medium viscosity . The products may contain fibres or large particles . This model is designed for products like minced meats , juices or yogurt with pieces , fish by-products and creams , among others .
Results The implementation of the SACOME pilot plant marked a significant advancement in the processing capabilities of dairy desserts for the client . With the versatile line designed with variable capacities , the operation achieved remarkable results in terms of product range , efficiency , and quality assurance . The meticulous analysis of thermal properties in collaboration with university laboratories ensured the precise design of heat exchangers .
