This fudge has a
melt-in-your-mouth
consistency with just the right amount
of sweetness and a hint of chewiness
from the goji berries; it's not sickly sweet
like regular fudge so it won't make you
feel lethargic or uncomfortably full,
and it's packed with healthy fats to help
promote super shiny hair and great skin.
If you don't like peanut butter, don't worry
- you can replace it with any nut or seed
butter and it will still taste fabulous!

PEANUT BUTTER AND
GOJI BERRY FUDGE
By Meghan from Naturally Meghan
| Makes 8 fudge pieces
¹⁄³ cup dried goji berries
½ cup natural runny peanut butter (or other nut/seed
butter of your choice)
2 tablespoons melted coconut oil
2 tablespoons liquid sweetener of choice (or to taste)
1 Place 8 cupcake cases on a baking/cupcake tray and
scatter the goji berries across the bases of them.
2 Mix all the other ingredients together then divide
this mixture equally between the cases. Place the
tray in the freezer for an hour or two to allow the
fudge to set then remove each fudge piece from the
cases and transfer them into an airtight container.
3 Store them in either the fridge or the freezer and
enjoy!
