COCONUT CHIA PUDDING

1 can coconut milk
¼ cup white chia seeds
2 tablespoons rice malt syrup or honey

1 teaspoon organic vanilla paste
shredded coconut and goji berries to serve
1 Combine all ingredients in a large jar and
shake to combine.
2 Leave in the fridge to set, stirring or shaking
after the first 10 minutes, for one hour.
3 Pour pudding into individual jars or bowls
and top with shredded coconut and goji
berries before serving.
