If you think authentic cheesecake flavor is impossible
without the cheese, think again. Raw
happens to be one of the most authentic tasting raw
desserts, thanks to the magical combination of cashews
and coconut oil. Just be sure to soak your cashews overnight. If
you don’t have cashews, macadamia nuts are a perfect substitute.

COCONUT CREAM
1 cup almonds
2 cups raw cashews soaked
2 cups young coconut meat
1 cup dates
2 frozen bananas
4 dates
½ cup shredded coconut
4 soaked dates
1 teaspoon vanilla extract
1 teaspoon coconut oil
1 teaspoon Acai powder
2 tablespoons lemon juice
pinch of salt
1 lime juiced
2 tablespoons coconut oil, melted
pinch of salt

1 For crust: in a blender
pulse all ingredients.
Press mixture into mini
cupcakes form.
2 Blend ingredients for
cream and add mixture
to the crust.
3 Put in the freezer
for at least
3 hours.

4 Blend all ingredients for coconut cream until very smooth
and creamy. This may take
5-7 minutes. Chill for 20
minutes before using.
5 Top cupcakes with
coconut cream
and enjoy!
