TEN GLU GOODNESS E FRE EATS VEG AN CHICKEN SALAD By Therese Kerr | Serves: 2-4 people 2 medium boneless chicken fillets Y DAIR 1 teaspoon sea salt FREE ½ cup chopped nuts, such as almonds, walnuts or pistachios You can add sprouts for an extra boost; they are miniature whole plants which include the roots, stem and head, so we get the benefits of all these plant parts which are normally discarded. Sprouts are not just for health nuts or rabbits — we think organic sprouts are a superfood and one of the most concentrated sources of nutrition. If your child currently limits their sandwich fillings, offer this delicious chicken salad (on its own) on a weekend or evening meal, before giving as a wrap. 1 apple, thinly sliced and cut into bite-sized pieces O LE PA I love this salad recipe on its own, but using it in a wrap is also great as an extra filler for children or if you are particularly hungry. ½ cup Mayonnaise (The G-Team suggests cashew mayonnaise from Issue 3) E IN Y AL RG LK NE A E 2 teaspoons fresh lemon juice 4 large basil leaves, torn or shredded 1 tablespoon white chia seeds SUPER FO OD extra veggies like peas, cucumbers, peppers (optional) Sea salt and pepper, to taste 1    Place the chicken breasts in a medium saucepan; add just enough water to cover the chicken. Stir in the sea salt, cover the pan with a lid and bring to the boil. 2    Reduce heat and simmer for 10-15 minutes, or white color. 3    Remove the chicken from the saucepan, drain on a paper towel and allow it to cool. 4    Once cooled, slice the chicken into bite-sized pieces. 5    In a large bowl, combine the cooked chicken, tomatoes, celery, cucumber, nuts, seeds and apple. 6    Add the mayonnaise, lemon juice, spring onions, herbs, chia seeds (if using) and salt and pepper to taste. 7    Refrigerate the mixture until chilled. Serve over lettuce leaves and garnish with avocado slices. TIP if you're in a hurry, you can cut the chicken into small pieces before poaching and it will be cooked in a few minutes. MAG 15
