FIG GREEN SALAD
A few lettuce pieces, some cucumber, tomato, carrots and some feta cheese is always a winner. The fig can be substituted with any fruit you like if not in season. Some crusty french loaf or seed loaf for a bit of carbs does not harm if not over indulged.
THAI VEGETABLE STIR FRY
Cut some fresh green beans, carrot, onions, zuchini and courgettes and flash fry in a very hot pan. You can add chilli, garlic, fish sauce (very little), soy sauce and a little oyster sauce and some ginger. Flash fry for about 10 minutes only as you want the vegetables still to be a bit crunchy. Serve immediately with a great glass of red wine or fresh juice of your choice.

A quick evening meal does not have to be much work. When you tired you need something quick n easy. Wash some fresh veggies and cut some left over meat or chicken or a tin of tuna and mix. Make a simple white sauce and spice it up with some garlic, fresh chilli and red pepper and pop into the oven whilst you unwind and have an evening meditation of about 20mins. Once you done with your meditation your meal should be ready!
