Almond Joy Granola

2 1/2 cupOld fashioned oats

2 tbs Coconut oil OR butter, melted (I used Smart Balance butter)

1 tspCoconut extract

1/4 cupBaking stevia OR 1/2 cup sweetener that measures like sugar 1

1/8 cupHoney

1/8 cupEgg whites (or egg whites from a carton)

1 tspBaking powder

PinchSalt (or to taste)

1/2 cupCoconut flakes

1/4 cup Mini chocolate chips (or chopped dark chocolate)

Optional: 1/2 cup sliced almonds, 1/4 cup white chocolate chips

1) Preheat oven to 350 degrees. Line a baking sheet with foil or parchment paper. (If using foil, spray with non-stick cooking spray).

2) Mix all of the ingredients together in a medium sized bowl, (except for the coconut and chocolate chips) and stir until everything is well combined. Bake for 15 minutes, then remove from oven and stir to break granola apart. Add coconut. Return to the oven for another 15-20 minutes, or until granola is crisp.

3) et cool completely, and add chocolate chips (and almonds/white chocolate chips if using).
