CHEESE OF THE MONTH Burrata
Burrata is a fresh Italian cheese, made from fresh mozzarella and fresh cream. The cheese is stretched tissuethin, and is filled with creamy Stracciatella,( mozzarella and fresh cream). The outer shell is solid mozzarella while the inside is a luscious blend of velvety cream and fine strands of stringy curd. A hand-tied knot seals in the delicate pouch of cow’ s milk mozzarella. Both elegant and decadent, burrata is an experience to savour and to share. It is usually served fresh and at room temperature. Can be served in the centre of a soup or salad, with grilled vegetables or simply with ripe tomatoes and a good olive oil and sea salt. The name“ burrata” means“ buttered” in Italian.

We’ ve all experienced a cold … they’ re the nasty things that make your nose run, give you a splitting headache, and can even lead to a loss of appetite! With the colder seasons creeping in, we’ re more prone to catching the common cold. Read on to find out our five ways you can beat a cold with food.
Enjoy a good dose of fruit and veggies Eating a wide range of fruit and veggies ensures you are receiving a good dose of vitamins and minerals. Particularly Vitamin C which helps to reduce the duration and severity of cold symptoms. You can find Vitamin C in citrus fruits and veggies like capsicum, kale and broccoli! Embrace protein rich food There are a couple of good reasons why consuming protein in each meal can help beat the common cold. Protein contributes to tissue repair and helps maintain muscle mass which is important for supporting the body when fighting a cold. Protein sources include beef, and chicken. Seafood and soy are also good sources of zinc, which too can help reduce the duration of a cold. Include probiotics in your diet Your gut is important when it comes to defending against cold symptoms. Probiotics help support the healthy function of the gut. They can help reduce the duration and severity of a cold. Think yogurt and kombucha – foods that have healthy bacteria and are yummy too! Drink plenty of fluids Water is essential in maintaining hydration, and while fighting a cold, it’ s likely that you’ re dehydrated. CUSTARD APPLE
Also known as sugar-apples or sweetsop, custard apples are a sweet subtropical fruit that grow along the East Coast of Australia. The popularity of this exotic fruit has skyrocketed over recent years and Australia is now the largest commercial producer of the fruit worldwide. Often compared to the sweet taste of cooked pear and custard this fruit is the perfect afternoon snack!
Selecting tips
• Choose fruit that are pale green in colour.
• Fruit is at its best when it is slightly firm, similar to the avocado they will yield to a small amount of pressure.
• Once the fruit is ripe it best to store fruit in the fridge.
PAPPLES
This juicy new star in your greengrocer is a pear dressed as an apple. Developed in New Zealand and now grown in Victoria, this round fruit is a cross between the Asian and European pear varieties. Crisp and juicy like a nashi pear, the papple is deliciously sweet and low in acid. It fully ripens on the tree but has a long shelf life and keeps well. It’ s best stored in the fridge.

• Thinly slice and serve on a cheese platter with chutney.
• Chop and toss through an autumn fruit salad with seedless grapes, pineapple, Valencia oranges and passionfruit pulp.
