CHEESE OF THE MONTH Burrata

Burrata is a fresh Italian cheese , made from fresh mozzarella and fresh cream . The cheese is stretched tissuethin , and is filled with creamy Stracciatella , ( mozzarella and fresh cream ). The outer shell is solid mozzarella while the inside is a luscious blend of velvety cream and fine strands of stringy curd . A hand-tied knot seals in the delicate pouch of cow ’ s milk mozzarella . Both elegant and decadent , burrata is an experience to savour and to share . It is usually served fresh and at room temperature . Can be served in the centre of a soup or salad , with grilled vegetables or simply with ripe tomatoes and a good olive oil and sea salt . The name “ burrata ” means “ buttered ” in Italian .

PAPPLES
