What fish is used at hundred acre bar? Why that type?

At hundred acre bar we only use Cone Bay salt water barramundi. It has the freshest flavour. We find salt water is alot better as fresh water barra often has a muddy taste. Its a consistent product over many years that our customers love. The taste is exceptional, the texture perfect and the overall quality of product is consistently wonderful.

Top three types of fish and why?

1.Barramundi

2.Pearl perch – favourite reef fish

3.Tuna – simple eating, clean; you can sear it and its ready to go

Tips for cooking fish?

Always use high heat and cook fast. Learn about the type of fish and the key differences between reef, white, oily – cooking times vary for these. Always let rest after cooking

Favourite spring meal?

My favourite meal this time of year other than fish would be lamb. Seared lamb cutlets on a panzernella salad with a fresh cucumber yogurt!
