Forget driving over lemons and try striving over them with Val Stones ’ lemon curd . It ’ s actually easy peasy and will take your cakes to new heights . Works on toast too !
Lemon Curd
This is really quick and easy to make . It can be made earlier , or you can make it as the cake is baking . This recipe will make one and a half jars , enough for a four-tier cake and some left over . ( For more lemony deliciousness , see Val ’ s Lemon Layer Cake recipe on page 24 .)
Ingredients
150g caster sugar 2 large juicy lemons ( grated zest and juice ) 4 large eggs 100g unsalted butter
Method
1 . I use a double boiler , or porringer , but you can use a microwave on medium for bursts of a minute , taking out and whisking until the curd is set . 2 . Place the grated lemon zest and sugar in the double boiler / microwave . 3 . In a bowl whisk the lemon juice with the eggs then pour the mixture over the sugar and stir well with a wooden or silicon spoon . 4 . Add the butter cut into small squares so that it melts quickly . 5 . Stir the mixture continuously and it should thicken in 10 to 15 minutes . I make a cup of tea at the same time to drink while I ’ m stirring . 6 . When set , bottle for use later . To test whether the curd is set , cover the back of your spoon with curd and then draw the back of a teaspoon handle down the curd . It is set when it the curd doesn ’ t run back together . 7 . Remove the warm jars from the oven and pour the lemon curd into them , cover with waxed circles , and then place the lids tightly on . This will keep for two to three weeks in the fridge .
