8. Sprinkle in the almonds and
30g Parmesan along with a
twist of salt and pepper. Stir
well and set aside.
9. To make the sauce, pour the
olive oil into a shallow sauce-
pan and add the sliced garlic.
Fry gently over a medium heat
for 3 minutes.
10. Add the tinned tomatoes
and basil and season with
salt and pepper. Cook for 25
minutes while you prepare the
pasta.
11. Cut the dough in half, cover
one half with cling film and
roll the other portion of pasta
dough out using a rolling pin or
pasta machine if preferred.
12. Roll the dough into two long
rectangular sheets.
13. Place the pasta filling into
a disposable piping bag and
secure the top.
14. Onto one sheet of pasta,
pipe 5cm lengths of filling in-
termittently acros s the length of
the dough, then repeat below if
space allows.
15. Place the other pasta sheet
on top and secure around
the fillings, using your hands
to cup the dough around the
filling and remove excess air.
16. Using a pastry roller, (or
pasta stamp) cut in between
each ravioli and set aside.
Repeat with the set aside pasta
dough, until all of the mixture
has been used.
17. Place a large pan of water
on to boil. Once boiling, salt
well and add the ravioli. Cook
until al dente.
18. Drain the pasta and add
the parcels to the sauce in
the pan. Serve with a drizzle
of olive oil and an additional
sprinkle of Parmesan.
