lunchtime? It is unlikely to be a problem
for a team that had to rustle up a cocktail
party for 600 with only a few hours’
notice – to celebrate Michael Phelps

during the Olympics! “The key is to
always keep it simple and be prepared,”
said Philipp calmly. “I quickly learned
that everything is super last minute at
the Olympics and so we start sourcing
suppliers some 3½ years before the
event [his team is already working on the
Tokyo Olympics of 2020] and only work
with the big hotels – it is the only way.
Although, when we were feeding 3,000
– 4,000 people a day during the Winter
Olympics in Sochi, Russia, in 2014, our
biggest headaches were that we couldn’t
use salad as it did not travel – Moscow
was a three-day drive away – and
problems with the supply chain meant
that we could not bulk up fast enough.”
Of course, Mosimann should not have
to face those gargantuan types of problems
at Smith’s Lawn, but Philipp and his team
will be ready for any special requests
that we may throw at them. “We cooked
for 700 people at the Lord Mayor of
London’s banquet last year and there were

120 different dietary requirements,” said
Philipp in amazement.
The Mosimann team is no stranger
to the Argentine asado ether, often a
staple after polo around the world “We
previously hosted an asado at Guards
Polo Club for a client – catering for
600 people,” recalled Philipp. “In fact,
one of the most wonderful meals I have
ever eaten was in Buenos Aires. I was in
Argentina by accident – my flight was
delayed due to fog in Sao Paulo – and
so I headed down to the harbour area
and had the most amazing fillet steak
– Argentina cuts beef so differently, to
really maximise the flavour.”
Of course, Mosimann’s is not looking
to be cooking asados every evening – but
the Clubhouse team is hoping to open for
dinner sometimes. “We are considering
the possibility of serving a three-course,
table d’hote menu on Thursday evenings,”
revealed Philipp.
So, although we cannot give you a
sneak preview of the Mosimann-style
menus – you will just have to book lunch
to experience it for yourself – our iconic
Clubhouse is clearly in safe, and talented
hands. Our biggest worry now is whether
the polo can match the food!
