Note from the publishers
This issue focuses attention on natural food preservation , allowing us to enjoy our harvests year-round . Natural foods , even when dried , canned , cooked , frozen or pickled are better in both taste and nutrition than their overly processed counterparts . But isn ’ t preserving , even naturally , a process itself ? Yes , but natural processing does not involve using chemical agents like artificial colors , preservatives and a host of other nasty stuff .
And how is most commercial food grown ? Using more chemicals , including fertilizers , pesticides , and not to mention GMO ’ s . Locally sourced food is better for our health , the wellbeing of our community and the world !
We ’ re also continuing to look at the movement towards relocalizing the food chain , and exploring different ways consumers can tap into the many and varied resources available to them to access local food .
Local food still constitutes a very small percentage of the total food available in Massachusetts . Because of customer demands , however , more retailers are recognizing the benefits of making local food more accessible . It ’ s a trend that will continue as committed locavores make their preferences known to the managers , chefs , and corporate honchos at their favorite establishments .
