Today, Herman has control over his own products and can store the tea until market conditions are favourable. Tea can be stored for years if conditions are right.
“ And besides, aged rooibos tea tastes much better than freshly cut tea. Tea is like good brandy,” Herman says.“ The longer you keep it, the more flavour it develops.”
Willie Schoeman, Herman’ s son-in-law, is an accountant like his wife, but has extensive experience in the rooibos tea industry. He also believes in holding tea back until the price is right.
“ We sell some tea directly ourselves and it is usually tea that has been stored for at least two years, sometimes as long as five years. Ageing gives the tea a lovely sweet, honey-like aroma. You can smell when tea has been aged.”
Producing good rooibos tea is no simple task. It requires careful planning and a thorough understanding of both the product and the natural environment. It is a highly seasonal crop, with tea-making taking place
