food even more. Those bacteria are eventually absorbed through the stomach lining and that is where the animal gets its protein from. Animals without these fermentation tanks can’ t do that. And that is what makes sheep, goats and cattle so special.”

With reference to a farmer’ s choice of cattle for meat production, there is a saying that you should farm with any kind of cattle, as long as they are red. Dwarsvlei carries red cattle, but also cattle of other colours and of the lighter variety.

“ The feedlots know the red cattle are safe, and feedlots are sensitive to breeds that don’ t have strong builds conducive to growth rate and fattening.”

Bottom: Andrew’ s father, John van Lingen, bought Dwarsvlei in 1963. Before that, the farm was at one stage home to around 700 thoroughbred horses.
