Executive Chef Trever
Champion had a favorite
game he liked to play with
his brother James. The
goal of the contest was to
see who could turn random
ingredients into culinary
masterpieces. Trever says
he looks back on that game
fondly, because it forced
him to be creative, a lesson
he certainly uses in his
cooking at Tsunami and
the new Sailor.
You can play the same
game, using locally
grown and harvested
fresh produce, meat and
seafood. Here are two
recipes you can serve
as Trever intended, or
tweak to make your own
depending on what you
find in the garden or at the
market.

Cooking is not a particularly difficult art, and the more you cook and
learn about cooking, the more sense
it makes. The most important ingredient you can bring to it is a love of
cooking for its own sake.
