On the other hand, Granny Smith, Jonagold and
Cortland apples hold their shape well when baked,
making them excellent for pies. Extra crisp and
juicy Fuji and Winesap apples are great for
snacking and salads. Of course, many heirloom
varieties with a wide range of applications are
appearing on the market. These types of apples
can be a culinary adventure to find and to use- an
activity the entire family can engage in and enjoy.
Challenge yourself to go beyond standard Red
Delicious, Fuji and HoneyCrisp, apple pie or apple
sauce. There are as many apple recipes as there are
apple varieties—thousands of each. So start with
these, but go on to try others of your own.

Local Apple Orchards
When you pick or purchase apples, keep in mind that
apples ripen quickly at room temperature. Store them
in a perforated plastic bag in the refrigerator. Most
apples, with the exception of Golden Delicious and
McIntosh, freeze well for use in baking and sauces
(but not for eating fresh—they turn softy when
thawed). As with other fruits, clean, dry and slice the
apples, placing them in a single layer on a sheet tray,
then transfer them to a freezer bag. If picking apples
