The Feedfeed's Roasted Chickpea Gyros
Ingredients
For the Chickpeas:
1 can of chickpeas, rinsed and strained!
2 tbsp dry dill
1 tsp salt
1 tsp peper
1 tbsp lemon
For the Tzatziki
1 cup of Vegan Sour Cream
½ cup of chopped cucumber
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1. Preheat your oven to 350 - check a few steps down depending on how you want the chickpeas cooked!
2. Line a baking sheet with parchement.
3. Now into a bowl combine all the ingredients for the chick peas, stir well and transfer onto the baking sheet! Pop the chickpeas into the oven, and now wait about 40 minutes
4. Prepare all your veg of choice, and the pitas you plan on using- and set aside.
5. Check on your chickpeas... depending on how crunchy you want them means the longer they have to cook... this can take up to an hour and a half!! If you want them crunchy on the outside, and soft on the inside them cook them at 375, for 45 minutes!
6. In the mean time prepare your Tzatziki by combining all the ingredients into a bowl, and stirring!
