Flourless Banana Bread • • • • • • • • • • • 3 Green Plantains 2 Ripe Bananas 5 Eggs 1/4 cup Organic Coconut Oil 1/4 cup Honey 1 tsp Baking Soda 2 tsp Cinnamon 1/4 tsp Clove 1/4 tsp Sea Salt 1 tsp Pure Vanilla Extract 1/4 cup Raw Pepitas or Lily’s Organic Chocolate Chips 1. Preheat oven to 350°F. 2. Peel and cut the Plantains & Bananas into chunks, add to a blender, along with the remaining ingredients — except for the pepitas and/or chocolate chips. 3. Pulse until smooth! 4. Pour the contents of the blender into a greased (buttered!) 9 x 13 baking dish. 5. Sprinkle pepitas or chocolate chips over the batter. 6. Bake for 45 minutes at 350°F 7. Remove from oven, let cool, cut, serve and enjoy! 42
