Fabio Viviani, a Top chef favorite, restaurateur and cookbook author, sat down with me at his new Chicago restaurant, Siena Tavern. Here we talked about his restaurant, his new cookbook, and some GEM pasta recipes. In his new cookbook, Fabio’s Italian Kitchen, he shares many of his family’s recipes that have been passed down through generations. He explains that these recipes are all simple to execute and delicious. Just to see exactly how simple pasta dishes can be made using only a couple of ingredients, we played a fun little game. I would name a main ingredient found in any market, such as rotisserie chicken, and then Fabio would have to pair it with three other ingredients and a pasta.
