are the collaborations that happen before,
during, and after each event. These folks
are not hesitant to help each other, which
is a very refreshing thing. Chad and Chase
of LASA in Los Angeles served monthly
dinners at Elysian in 2015. In 2016, Chef
Alvin Cailan of Eggslut gave them the
opportunity to cook at his new spot called
Unit 120 in Chinatown. He has also opened
up the space to out of town chefs such as
Carlo Lamagna of Portland and pop-up
chefs Ria Barbosa and Matt Wilson of Los
Angeles-based Wild Kitchen.
Looking to the future. There is so much
more to learn about Filipino food. We hope
that the trend will graduate from being a fad
to becoming a staple in American cooking.
With the large Filipino populations around
the United States, it would be rewarding
to hear citizens going out to Filipino
restaurants. Many Filipinos cook because it
preserves the culture. We intend to do that
for years to come.
