Title of Thesis:‘ Hypocholestrolemic Palm-Based Liquid Coconut Milk Substitute Infused with Nanocrystal Cellulose Derived from Palm Pressed Fiber.’
Nanocrystal cellulose( NCC) has gained attention for its amphiphilic nature, high aspect ratio and large elastic modulus which make it beneficial as a natural stabilizer for emulsion stabilization. The goal of the study is to produce a Pickering emulsion( PE) of palm oil stabilized by NCC, with the potential to influence lipid digestion and cholesterol absorption. In the study, NCC demonstrated excellent stabilization of palm oil to form stable Pickering emulsions. Based on the results of in vitro and in vivo studies, NCC-PE could benefit health and has the potential to substitute for coconut milk.
