Leeli kolmi ni curry

SERVES 4

Ingredients

• 150g cashew nuts, roughly chopped
• 2 tbsp neutral oil
• 4 green cardamom pods, cracked
• 4 cloves
• 5 – 7cm piece cassia bark
• 1 onion, finely chopped
• 3 garlic cloves, crushed
• 5 – 6cm piece ginger, crushed
• 8 – 10 fresh curry leaves, shredded
• 2 green chillies, deseeded and sliced
• ½ tsp ground turmeric
• 1 tbsp ground coriander
• 1 tsp ground cumin
• 400 – 600ml coconut milk, or 250g coconut milk powder blended with 500 – 600ml water
• 2 tbsp chopped coriander
• 20 – 25 king prawns or 5 – 6 white fish fillets such as sea bass
• fried papads and plain rice or light cumin pulao, to serve
A simple green prawn curry that doesn’ t need a great deal of preparation but will still be one of the most delightful curries you ever eat.
1 Bring 300 – 400ml water to the boil in a saucepan. Remove from the heat, add the cashews and leave to soak for 2 to 3 hours.
2 Heat the oil in a casserole dish over a medium heat. When hot, add the cardamom, cloves and cassia bark. Cook for 1 minute, then add the onion and cook until translucent but not browned. Add the garlic, ginger, curry leaves and green chillies and cook gently, again without browning. This stage should take no longer than 5 minutes.
3 Mix the turmeric, coriander and cumin with 100 – 150ml water in a jug, then pour into the pan.
4 Drain the soaked cashews, reserving the soaking water. Blend the cashews with the coconut milk to a smooth paste, adding some of the soaking water to reach a single cream consistency. Pour this mixture into the pan and stir for 1 to 2 minutes. Bring to the boil, uncovered, stirring continuously. Season with salt and simmer for 1 to 2 minutes.
5 If using white fish, cut into 5 – 8cm pieces. Add the prawns or fish to the pan, cook for 2 minutes, then cover and remove from the heat. The residual heat will cook the seafood through in 5 to 6 minutes. Serve with fried papads and plain rice or a light cumin pulao. goodfoodshow. com 31
