Espresso Chocolate Cake

This is the simplest of cakes . Made with oil and hot water , it ’ s also the moistest chocolate cake ever – it literally never dries out ! The intense coffee flavour makes it super special .

SERVES 12 SLICES
FOR THE CAKE :
• Neutral oil , for the tin
• 225g plain flour , sifted
• 350g caster sugar
• 85g cocoa powder
• 1½ tsp baking powder
• 1½ tsp bicarbonate of soda
• 250ml whole milk
• 2 medium eggs , lightly beaten
• 125ml olive oil
• 3 tbsp coffee granules
• 100g milk chocolate , shaved , to serve
FOR THE GANACHE :
• 250g dark chocolate ( 70 % cocoa ), chopped
• 1 tbsp coffee granules
Tip : If you want to make this cake for kids , remove the coffee and add extracts instead , such as vanilla , peppermint , or orange .
1 Heat the oven to 190 ° C / 170 ° C fan / gas 5 . Oil and line a 20cm round cake tin with baking parchment . 2 Place the flour in a large bowl with the sugar , cocoa powder , baking powder , and bicarbonate of soda . Whisk everything together until all the dry ingredients are well combined . Make a well in the centre and pour in the milk , then add the eggs and olive oil . Whisk until you have a thick batter . Pour in 250ml boiling water and the coffee granules , then mix well – the batter will be very runny . 3 Pour the batter into the prepared tin and bake on the middle shelf for 55 minutes to 1 hour , or until a skewer inserted into the centre comes out clean and the cake is coming away from the edges . Remove from the oven and leave to cool completely in the tin . 4 To make the ganache , put the dark chocolate in a bowl . Pour in 200ml boiling water and sprinkle over the coffee granules . Stir until the chocolate has melted and the mixture is smooth . For a quicker and ultra-smooth result , use a hand blender . Pour the ganache over the cake and spread it out evenly . Sprinkle over the shaved milk chocolate , then place the cake in the fridge and leave to chill completely so the ganache can set . 5 To serve , remove the cake from the tin , place it onto a serving dish , and cut into wedges .
