Rocky Road Christmas Pudding

Don ’ t like traditional Christmas pudding but still want the ceremony of it ? Jane Dunn ’ s clever no-cook pudding is a chunky dome of chocolatey biscuits , marshmallows , raisins , and more .

SERVES 10-12
FOR THE ROCKY ROAD
• 150g digestive biscuits , chopped
• 150g amaretti biscuits , chopped
• 100g mini marshmallows
• 100g raisins
• 100g glacé cherries
• 125g unsalted butter
• 125g golden syrup
• 200g milk chocolate , finely chopped
• 200g dark chocolate , finely chopped
TO DECORATE
• 100g white chocolate , chopped
• 75g unsalted butter
• 150g icing sugar
• Green food colouring
• Red M & M ’ s
1 Line a medium-sized metal bowl with cling film and set aside ( this will be your pudding mould ). 2 In a large bowl , mix together the chopped digestive biscuits , amaretti biscuits , mini marshmallows , raisins , and glacé cherries . Set aside . 3 In a small saucepan , heat the butter and golden syrup until the butter has melted . Remove from the heat and add the chopped milk and dark chocolate . Stir until the chocolate melts . If there are lumps , return the pan to the heat briefly until fully melted . 4 Pour the melted chocolate mixture into the bowl with the biscuits and stir well . Transfer the mixture into the lined metal bowl , pressing it down to compact it . Refrigerate for a few hours until set , or leave it overnight for best results . 5 Once the ‘ pudding ’ is set , it ’ s time to decorate . Melt the white chocolate and gently pour it over the top of the pudding , allowing it to drip down the sides . 6 Cream together the butter and icing sugar until smooth . Add enough green food colouring to achieve a holly-leaf shade . Pipe the buttercream onto the pudding to resemble holly leaves . Place red M & M ’ s on top as ‘ berries ’. Let the pudding set before serving .
