FOR THE TURKEY SALAD
• 200g shredded cooked turkey
• 4 tbsp mayonnaise
• 2 Indian green finger chillies , finely chopped
• 1 large red onion , finely chopped
• 20g coriander , finely chopped
• ½ lime , juiced
TO SERVE ( OPTIONAL )
• Buttered white bread
• Cooked penne or fusilli
• Crackers or nachos

Goan Turkey Salad ( Junglee Turkey )

RECIPE
This traditional Goan recipe is a versatile way to use up leftover chicken or turkey . The serving options are varied – enjoy it for lunch , as a side , or even as a dip !
1 Put all the turkey salad ingredients into a large bowl . Mix well , then season with salt and pepper . 2 To serve , either sandwich a generous amount of turkey salad between two slices of buttered white bread ( the traditional way to eat junglee turkey ); toss through cooked pasta to make a pasta salad ; or serve in a bowl with crackers or nachos on the side for dipping .
TIPS You can use an electric whisk to shred the turkey quickly , if you like . It ’ s easier to shred the turkey when its warm , so heat in the microwave for about 30 seconds first .
Swap the mayo for Greek yogurt and some olive oil to make this recipe higher in protein and lower in calories . You can swap the turkey for any protein of your choice – cooked white fish , boiled eggs or grated tofu all work well .
