• 200g butter
• 100g sugar
• 4 star anise
• 10 medium-sized carrots , peeled
• 1 clementine

1 In a large saucepan , add the butter , 400ml water , sugar , and star anise . Melt over low heat , stirring to combine . 2 Meanwhile , boil the carrots in water as usual for 30 – 35 minutes , until tender . 3 Remove the carrots from the boiling water . Reduce the butter mixture further over low heat , then pour it over the carrots . Finish by zesting the clementine over the top and season with Maldon Sea Salt before serving .
SALT-BAKED CELERIAC
• 1 large celeriac , scrubbed and washed
• Dijon mustard
• Maldon Sea Saltt
• Butter
• Olive oil

SALT-BAKED CELERIAC 1 Preheat the oven to 180 ° C / 160 ° C fan / gas mark 4 . Rub the celeriac with Dijon mustard , then coat generously with Maldon Garlic Sea Salt . Place in the oven and roast for 2 hours and 30 minutes . 2 Carefully remove the celeriac from the oven , cut away the skin , and slice into thick steaks . Finish the steaks in a hot pan with olive oil , basting with butter until golden and caramelised .
