ver wonder what makes Caribbean food sizzle with that spicy, tasty, flavourful, melting pot of all things divine? Well in Barbados it’ s the seasoning. Bajan seasoning is a common staple in Barbadian households, made from a mix of various fresh herbs and spices,( usually locally grow) such as thyme, marjoram, parsley, basil, clove, black pepper, paprika, salt, garlic, and onions.
This flavourful seasoning can be bought in various supermarkets all over the island, but many Barbadians, like to make their own, as it can be relatively easy to prepare. Bajan seasoning can vary from hot to mild and if you have already eaten locally prepared meat or fish, chances are you have already sampled this tangy seasoning.
Often called the secret ingredient in Caribbean kitchens, this wet seasoning is used mainly on meats and fish to add extra jazz and zing. It is usually placed between the meat and skin before grilling, baking or frying. It can also be used on vegetables( such as eggplants), or used to add flavour to soups and sauces.
