Meet our first Young Ambassador, Isaac
The face of our #treatglutenseriously campaign!
Isaac is an inspiration to us all! At the age of 10, with the
support of his parents, he started his business, Gluten Free
by Isaac, based in Geelong, Victoria.
His growing business supplies delicious gluten free donuts
to local cafés and restaurants, and caters for party orders
also. Isaac is proud to be our first Young Ambassador and
is already making an impact raising awareness of coeliac
disease, as the face of our new awareness campaign!
Isaac was diagnosed with coeliac disease when he was
six years old after he suddenly became unwell. He lost
6kg in three weeks and his doctor immediately suspected
coeliac disease, which was confirmed via a biopsy.
Isaac came up with the idea to start a food business while
on a family holiday in Hawaii, where he was impressed by
the range of gluten free food available to diners.
Isaac set out to perfect a recipe for gluten free donuts – a
favourite treat prior to his diagnosis with coeliac disease.
“We read lots of donut recipes, both gluten free and gluten-
containing recipes, and started to experiment,” Isaac said.
“We tried different flours, oils and ingredients until I was
happy with how they looked and tasted. I took some
samples to a few local cafés. The feedback was positive,
and the cafés wanted to order!”
“Mum set up an Instagram and Facebook page and it took
off from there. Some mornings I cook up to 200 donuts
before school!”
Isaac takes time to talk with potential stockists on correct
storage methods and food handling procedures for gluten
free food – to help minimise the risk of cross contamination.
“Being asked to be the first ever Young Ambassador for
Coeliac Australia is an honour that I am so excited to
accept. Any opportunity to spread the word about coeliac
disease, as well as safe storage and preparation of gluten
free food will only help those with coeliac disease have
positive dining experiences.”
