INGREDIENTS
4
eggs
separated
4
large
ripe
bananas
sliced
1
cup
granulated
sugar
-?
divided
½
cup
firmly
packed
light
brown
sugar
¼
cup
butter
¼
teaspoon
ground
cinnamon
*Pre-?heat
oven
to
325
degrees
1/3
cup
all-?purpose
flour
2
large
eggs
2
cups
milk
2
tsp
vanilla
extract

vanilla
wafer
Banana
Mixture:
1) Mix
together
brown
sugar,
butter,
and
cinnamon.
Cook
in
a
large
skillet
over
medium
heat,
stirring
constantly,
2-?3
minutes
or
until
bubbly.
Add
bananas;
cook
2-?3
minutes
longer
or
until
thoroughly
heated.
Remove
from
heat.
Set
aside.
Pudding
Mixture:
2) Whisk
together
¾
cup
of
the
granulated
sugar,
1/3
cup
flour,
2
large
eggs,
2
cups
milk
and
the
4
egg
yolks
in
a
heavy
saucepan.
Cook
over
medium-?low
heat,
whisking
constantly,
8-?10
minutes
or
until
it
reaches
a
pudding-?like
consistency
(mixture
will
begin
to
bubble
and
will
hold
soft
peaks
when
whisk
is
lifted).
Remove
from
heat
-?
stir
in
vanilla.
Assembly:
3) Divide
half
of
banana
mixture,
pudding,
and
wafers
among
8
(1
cup)
oven
proof
ramekins
(glass
dishes).
Layer
with
remaining
vanilla
mixture,
pudding
and
vanilla
wafers.
Set
aside.
Meringue:
4) Beat
the
remaining
4
egg
whites
at
high
speed
with
an
electric
mixer
until
foamy.
Add
the
remaining
¼
cup
granulated
sugar
one
tablespoon
at
a
time;
beating
until
stiff
peaks
form
and
the
sugar
dissolves
(2-?4
minutes).
Spread
meringue
over
individual
ramekins.
Place
ramekins
on
a
baking
sheet.
Finish:
5) Bake
at
325
degrees
for
15-?20
minutes
or
until
meringue
is
golden.
Let
cool
on
wire
rack
for
30
minutes.
