Taste, Texture & The Twin Cities

Rustica Bakery began as a way to bring the philosophy and techniques of the National Baking Center, housed for a time in Minneapolis, to life. The focus at NBC revolved around taste, texture and process. Stephen Horton wanted to open a bakery in Minneapolis highlighting everything he had learned during the time he spent there. The bakery opened in September 2004 at 46th and Bryant, sharing a space with Java Jack’s coffee shop, and remained there for five years before moving to the Lake Street location.
