Get your vegetable challenge on, daily. Vegetables are an important part of a healthy diet. Remember, you are what you eat. Vegetables, like fruits, are low in fat but contain good amounts of vitamins and minerals. All the Green-Yellow-Orange vegetables are rich sources of calcium, magnesium, potassium, iron, beta-carotene, vitamin B-complex, vitamin-C. As in fruits, vegetables too are home for many antioxidants that; firstly, help protect the human body from oxidant stress, diseases and cancers, and secondly; help the body develop the capacity to fight against these by boosting immunity.

GREEN PEPPER AND ZUCCHINI

4 small zucchini (1 pound)

2 green onions, sliced

2 tablespoons vegetable oil

1 small green pepper, chopped

1 teaspoon salt (optional)

1/8 teaspoon garlic powder

1/8 teaspoon pepper

1/4 teaspoon dried dillweed

Cut zucchini into ½-inch slices. Heat oil in skillet (10-inch). Add zucchini and remainder of ingredients. Cover and simmer about 10 minutes, until zucchini is tender. (Makes 4 Servings)
