QUINOA BREAKFAST BOWL

INGREDIENTS 2 medium boiled eggs 1 / 2 cup of cooked quinoa

SERVES: 1

Suitable for any time of the day

1 / 2 cup or more of sprout of choice( e. g alfalfa or clover) 1 / 4 avocado, sliced 1 ounce of feta cheese seasoning as desired

INSTRUCTION:

Cook quinoa( 2:1 ratio of water to quinoa) and eggs( 6-7 minutes for medium boiled eggs). Let quinoa cool down after it has been cooked Add quinoa to the base of the bowl. Optional: mix in some coconut oil or butter with warm quinoa and sprinkle some herbs( e. g rosemary) and sea salt and pepper Add eggs, nuts, feta cheese and sprouts in a circular fashion.
