Purée of cauliflower
Serves: 4 Cooked: on the hob
1 small cauliflower or ½ large cauliflower 30g butter salt and pepper freshly chopped parsley
Preparation time: 5 minutes Cooking time: 10 minutes
1. Remove the green leaves and cut the cauliflower into florettes. Cook in salted boiling water until tender( about 10 minutes) and drain well in a colander. 2. Return to the saucepan and blend using a hand blender until smooth adding the butter and seasoning well with lots of salt and pepper. Stir in the chopped parsley.
To serve: if you have room, spoon a good portion onto the plate next to the terracotta pot. if not serve in small dishes for the guests to help themselves to. dietary requirements: vegetarian: OK vegan: NO, omit butter

Always use fresh cauliflower, never frozen or this will be too watery. This is more like a little well flavoured spoonable sauce rather than a vegetable.
Fresh French beans are difficult to find in the winter and can be extremely expensive but the‘ extra fin’ frozen beans are excellent quality. If you are cooking this recipe at home using fresh beans then cook them for 2-3 minutes in boiling salted water, drain well and then simply toss in the oil and garlic. sunday
French beans in garlic oil
Serves: 4 Cooked: on the hob

300g-400g frozen extra fine french beans
2 tablespoons olive oil 1 clove garlic, finely grated salt and pepper
1. Allow the beans to defrost in fridge( usually from the morning is ok but overnight is also ok). 2. Drain the beans well( they have already been blanched before freezing so they only need re-heating now not re-cooking). 3. In 1-2 sauté / frying pans heat the oil, salt, pepper and garlic, add the beans and toss well until heated through( add a lid or plate over the top if needed to heat faster) this will take about 10 minutes. dietary requirements: vegetarian: OK vegan: OK dairy free: OK nut free: OK gluten free: OK
