SENIOR SCHOOL Decking the halls for our boarders Our boarders once again enjoyed the efforts and talents of our catering and events teams for the special Halloween and Christmas dinners. The Dining Hall staff got into the Halloween spirit, dressing up in a variety of ghoulish costumes with even more ghoulish make- up! With cakes made to look like brains and witches hats, casseroles with fingers, black toffee apples and pumpkins galore, the students were in for a horrible treat! As always, the boarders and staff appreciated the effort and ate all of the delicious food! Christmas for boarders is always a special occasion and this year was no exception. With a delicious family style Christmas Dinner and a visit by Santa and the Grinch, the boarders enjoyed a delicious dinner with all the trimmings. Year 12 Boarders’ Recipe Book In the boarding community we are always looking for ways that we can help bring the students together, whilst helping to develop their life skills. A few years ago I held a “make -your-own pizza night” with my boarding year group, and I was amazed at the difference in their skills; some were culinary experts who could chop onions without shedding a tear, whilst for others it was clearly their first time in the kitchen! I have always loved cooking for family and friends, so was keen to share this passion with the boarders. Mr Fernandes teamed up with Ms Gordon in 2017 and they ran cooking classes for the Year 12 boarders, which were a great success, so we decided to run them again in 2018. Once a week the boarders worked in groups of 6-12 in the kitchen workshop and learned how to make healthy, affordable meals. With the help of Ms Gordon’s knowledge and skills they were able to not only learn or develop basic cooking techniques, but also have a chance to share a meal together. One thing that surprised me was the number of boarders who asked for the recipes after we made a dish. The idea to give them their own recipe book came about when I was at home making fresh pizza dough from a recipe that I still have from my Year 8 home economics class (thanks again Mrs Grange). What I thought would be really special however, was to not only include recipes from Ms Gordon’s class, but also recipes the boarders enjoy when they are at home. I approached the Year 12 boarders’ parents and was thrilled to have so many families submit their favourite home recipes for inclusion in the book. Healthy Hamburgers Sent in by Sophie Bannister Ingredients Method Patty 500g beef mince ½ cup breadcrumbs 1 onion grated ½ carrot 1 egg 1 tsp mixed herbs 1 tbs Worcestershire sauce 2 tbs sweet chilli sauce Salt and pepper to taste Patty 1. Whisk egg. 2. Grate onion and carrot. 3. Combine mince, breadcrumbs, onion, carrot, Worcestershire sauce, sweet chilli sauce, herbs and olive oil in a bowl. Season with salt and pepper. 4. If mixture is too wet you can add more breadcrumbs. 5. Divide the mixture into 6 portions and shape with hands into a patty. 6. Place patties on a plate and refrigerate. 7. Heat oil in frying pan. Cook patties over medium heat for about 5 minutes on each side. Year 12 boarders’ Chips 4 potatoes 1 tbs olive oil Salt Chips 1. Pre-heat oven to 180°C 2. Cut 4 potatoes into thin strips. 3. Place in bowl and mix with olive oil and salt. 4. Place chips on backing tray lined with baking powder. 5. Bake in oven for 15-20 minutes or until golden. 17 The Recipe Book was presented to the Year 12 boarders’ parents at their final chapel service and were very well received!
