In hopes of weather just a tad warmer than the Frozen Tundra , head on down to McPherson Cellars in Lubbock , Texas . The McPherson ’ s have been a part of the Texas grape and winemaking scene for over 40 years , with the start of it all coming from Dr . Clinton “ Doc ” McPherson . Doc , a chemistry professor at Texas Tech University , co-founded the Llano Estacado Winery in 1976 . This winery was one of the first wineries in Texas to open after prohibition . Doc ’ s son , Kim McPherson , is now the winemaker for McPherson Cellars . Kim is a graduate from Texas Tech with a degree in Food Science , who also completed the viticulture program at the University of California .

The winery is actually on the site of the former 1930s era Coca-Cola bottling plant in Lubbock ; Kim opened its doors in the fall of 2008 .
McPherson Cellars sources all of its fruit from the Texas High Plains AVA , mostly from their Sagmor vineyard . The rest of the fruit comes from other local vineyards and farms , such as Timmons Ranch , Lost Draw , and Castaño Prado Vineyards . The tasting room at McPherson Cellars is beautifully decorated for an elegant , yet rustically-refined atmosphere . The patio stays open in the summertime through the fall / winter seasons , for enjoyment of sipping your glass in the fresh , crisp Texas air . There are monthly happenings at the winery , and a Monday-Friday Happy Hour .
