MEXICAN BEAN SOUP INGREDIENTS 3 cups cooked beans 1 cup bean broth 1/2 onion chopped 1 garlic clove, chopped 1 Tbsp. olive oil 1/2 cup queso fresco, grated 1/2 cup sour cream 1 cup tortilla fried strips Salt to taste Directions: 1. 2. 3. 4. 5. 6. In a pan, fry the onion and garlic cloves with the olive oil until dark brown In a blender, add the beans, the bean broth and add the fried onion and garlic Blend until all ingredients are fully mixed Return this mix to the pan used in the first step Heat until hot Serve and garnish with the tortilla strips, cream and grated cheese
