FEATURED RESTAURANT KOGIKU BY KIKUSUI Kikusui has been running traditional authentic Japanese restaurants in Thailand since 1969. This their latest expression of Japanese culinary excellence is on the ground floor of Sabaisathorn Building in Silom Soi 9. For those arriving by Skytrain having arrived at Chongnongsri Station take the alley besides the Infinity Condominium, follow the dog leg right and it will take you directly to the restaurant. Inside the air conditioned glass cube there is a bright interior with white tables and alternating red and white chairs. Outside additional seating on the wrap around terrace with a tropical garden. Thai Chef Tumb learnt his Japanese culinary skills at the Bangkok branch of Tsuji Culinary Instiute, Japan’s most prestigious culinary institute that was founded in Osaka in 1960. Virtually all the fish they serve is flown in the famous Tsukiji fish market in Tokyo. Chef Tumb cuts thick slices and serves generous portions. Although Japanese rice is now being successfully grown in the North of Thailand, their’s is imported just to ensure a truly authentic taste. We first tasted their Sashimi Set which includes three fresh pieces each of hamashi, tuna, salmon, botan ebi (shrimp), Ikura (salmon roe, hokkaigai (surf clam) and, hotate (scallops). This was served with wasabi and soy sauce. Then came the Nigiri Sushi Set. Sushi is raw fish on rice. To start make the chef presses sushi rice in the palm of his hand into small bite size oblong blocks of sushi rice. He then lays on top of the rice the neta, Japanese for the topping which include salmon, tuna, ikura salmon roe. While sushi and sushami are better known Japanese dishes, Donburi the Japanese rice bowl is a style of Japanese dining that many be less familiar to many. It takes the fish and rice combination but serves it in individual bowl with the fish on a bed of rice. The first of these that we tasted was Salmon Ikura Don, pieces of fresh Norwegian f salmon topped with a sprinkling of Ikrua salmon roe served on a bed of Japanese rice in an oversized Japanese rice bowl.
