At the core of the business is their pizza al
taglio or metre long slabs of pizza, the Roman
pizza. The dough is made from two types
of flour, one imported from Italy, the other
sourced locally, The dough is left to set for
between 24-48 hours. Its then rolled into
a slab 100 x 30 cms. Its then pre-cooked
for 10 minutes in an electric fuelled Castelli
Forni:pizza oven from Rome by the Thai pizza
maker who was Italian trained by the owner.
The topping is added then it’s baked for an
additional 10-15 minutes depending on the
toppings. When it comes out of the oven its
cut in half length ways and the into squares
measuring roughly 15cms x 15 cms. At any
one time there will be anywhere from 8 to
12 of the total of 15 toppings available. The
names of each of the pizza reflect the origin
of the ingredients used. Once the customer
has ordered the pizza square is reheated in a
smaller electric over for 10 minutes. This is
a ubiquitous slice of Roman street food, the
crust base is thicker a Neopolitan pizza. They
also freshly bake their crostini bread sticks.
Should a customer want a pizza topping that
isn’t already baked, it can be ordered by the
minimum size is half a metre.
The deli counter which is at a right angle
to the pizza counter there is a full range of
Rustichella d’Abruzzo pasta, salami and hams
cut to order, the only non-Italian produces
is Iberico purely due to its superior quality.
Cooking sauces and pate, Italian Olive Oil and
Balsamic vinegar, jams, conserves and bread
baked freshly on site. All items can be served
in the bistro section or packed to take home.
The casually elegant bistro section offers
traditional Italian dishes pasta, risotto and
anti pasta from the whole of Italy not just
Rome, freshly extracted Italian espresso and
wine by the glass.
In addition to this branch they have the original
branch at street level underneath Asoke BTS.
For a slice of Roman pizza the choice has to
be Pala Pizza Romana.
