I’ ve placed grains in a“ neutral” position, that is, supportive of both buildup and breakdown, because they contain both protein and fiber. They seem to aid the buildup of matter as well as its breakdown. I have seen people lose quite a bit of weight upon switching to a whole-grain regime; then, once a satisfactory balance has been reached, grains maintain weight at a steady level, supporting whatever buildup is necessary. Salt and sugar are helpers in both processes. Salt causes the body to retain water and this process is essential to keep the body’ s form; only in excess is it undesirable. Paradoxically, salt also helps in breakdown by stimulating the kidneys to eliminate; I’ ve often seen people who eat lots of salt and who are very skinny. Sugar helps in the buildup process in conjunction with flour and dairy products; however, it is also a factor in breakdown, because it causes hyperactivity. Many children on a high-sugar diet, boys especially, are extremely thin( another reason for that may be that sugar inhibits the release of growth hormones). a
