Turkey con carne with
brown rice
Ingredients:
75g onion
7g garlic
100g carrot
75g celery
500g turkey mince
5g cumin
5g paprika
200g chopped tomato
5g salt
125g kidney beans
1k brown rice
(Makes 5 portions)
Directions:
1. Add a teaspoon of olive
oil in a sauce pan and fry the
turkey mince for 5 minutes
or until golden brown. Once
cooked, transfer to a colander
and allow to drain.
2. Add the onion, carrot,
celery and garlic to the same
pan add the salt and cook
gently for 5 minutes before
adding the paprika and cumin.
Cook out the spices for a
further minute before adding
the turkey mince back to the
pan. Now add the tomatoes and
kidney beans and cook gently
for 20-25 minutes.
3. Cook the brown rice according
to package instructions.
